Menu Monday: for Jessi and Dan

Here are two recipes that I made for dinner last night. We had our good friends, Jessi and Dan, over for dinner. They both gave two thumbs up to these "quick and easy" recipes. Dan wanted the recipes so that Jessi can make them for him....so, here ya go!

My Mom's Taco Plate: (good appetizer)
8 oz. cream cheese
8 oz. sour cream
tomatoes
lettuce
shredded cheddar cheese
1 package taco seasoning
tortilla chips

Blend together cream cheese, sour cream and seasoning. Spread on a dinner plate. Top with tomatoes, lettuce and cheese. Serve with tortilla chips!


Low-Fat Baked Chimichangas: (317 calories per serving)
8 (6 inch) fat-free flour tortillas
1.5 cups cooked and cubed chicken
2 oz. grated low-fat cheddar cheese
3/4 cup salsa

Mix chicken, cheese and salsa in bowl. Warm tortillas until pliable in microwave for 5 seconds. Dampen one side of tortilla with water and place wet side down. Spoon on chicken mixture. Roll tortilla up to hold in filling. Spray baking dish with cooking spray. Put them seam side down on baking dish. Bake for 15 minutes.

I usually serve it with flavored rice, like Spanish. Yummy!
