Chicken-Parmesan Pizza

It's been awhile since I've posted a recipe. Now that summer is in full swing, I've had a little bit more time to try some new recipes. Here's one of my latest favorites from Woman's Day magazine:

Ingredients:
2 tsp olive oil
1/4 tsp each salt and pepper
4 skinned, boned chicken breast halves (about 5 oz each)
1 can (14.5 oz) Italian-style stewed tomatoes
Four 6-inch prebaked pizza crusts
4 oz mozz. cheese, shredded (1 cup)
Basil
2 Tbsp grated Parm. cheese

1. Mix oil, salt, and pepper in small bowl, and brush on both sides of chicken.
2. Grill chicken (or cook it on your stove if you don't have a grill, like us).
3. Cut chicken crosswise in strips.
4. Spread about 1/2 cup tomatoes on each pizza crust to within 1/2 in. of edge. Top each with chicken and mozzarella.
5. Grill 2 more minutes. Cover grill and cook 2 more minutes longer, or until mozz. melts. (I just stuck ours in the oven for a few minutes to melt the cheese.)
6. Top each with basil and Parm. cheese.

Serves: 4
