Yea! It's finally a real "Menu Monday"...

Here's a yummy favorite of mine. I got it from a friend who got it off of kraftfoods.com. It's a great alternative to a regular taco dinner. And, yes, you actually CAN get your taco shells to look like the one in the picture. It was actually quite easy! Just follow the easy steps below to make this "TACO SALAD MADE OVER" recipe.




INGREDIENTS:
4 flour tortillas (8 inch)
3/4 lb. extra lean ground beef
1 Tbsp. chili powder
1/2 cup salsa
1 cup rinsed, drained canned kidney beans
4 cups salad greens
1/2 cup sharp cheddar cheese
1 large tomato, chopped
2 Tbsp. Ranch dressing

Preheat oven to 425°F. Crumple 4 large sheets of foil to form 3-inch balls; place on baking sheet. Arrange 1 tortilla over each ball; spray with cooking spray. Bake 6 to 8 min. or until tortillas are golden brown. (Tortillas will drape over balls as they bake.)

Meanwhile, cook meat with chili powder in nonstick skillet until browned, stirring occasionally. Add salsa and beans; cook until heated through, stirring occasionally. Place one tortilla shell on each of four serving plates. Fill evenly with salad greens, meat mixture, cheese and tomatoes. Top with dressing.

Yields: 4 servings
