Brownie Lovers

If you live with a brownie lover (like I do), you may want to try this new recipe I came across for making "Brownies and Cream Sandwich Cookies." I found the recipe on the side of the brownie box. I made them for several occasions already, and they have been a HUGE hit! They are really easy and quick to make. One of the best things about them is how cheap they are, too. I bought a brownie mix for $.50 on sale and made my own frosting (using my mom's peanut butter icing recipe) with ingredients that I already had on hand...making this dessert super cheap!

Ingredients for Brownie Cookies:
1 package brownie mix
1 large egg
2 tablespoons water
1/3 cup vegetable oil
1 can frosting (or make your own PB icing...see recipe below)

1. Heat oven to 375 and grease cookie sheet.
2. Combine the first 4 ingredients.
3. Stir until well blended and soft dough forms.
4. Drop by tablespoons onto cookie sheet.
5. Bake for 7-8 minutes (do not overbake).
6. Cool one minute before removing to cooling rack.
7. Spread frosting on cookie and top with another cookie!

Ingredients for Mom's Peanut Butter Icing:
Mix together...
2 unbeaten egg whites
1 tsp vanilla
4 tsp flour
4 tsp milk
1 cup shortening
1 box powdered sugar
1/2 cup peanut butter


(The icing recipe is the same that's in whoopie pies, but this has PB in it. Whenever my mom would make this growing up, she always made sure there was enough left over for my dad and us kids to eat some by the spoonful, which was our favorite part!)
